Should I charge my EV to 100%?

No. it is not necessary to always charge your EV battery to 100%. In fact, unplugging at 80% will actually help extend the life of your EV battery. The charging speed slows way down after the 80% mark anyway, so getting that extra 20% can take a lot longer. Of course, when you need additional range for a particular journey, charging to 100% is totally fine.
